How could a recipe go wrong if you’re using these three ingredients?

Usually I’m not a fan of lemon flavor in cakes or any sweet dessert, but I figure I would give it another try this time.

I’m so glad I did.

Blueberry and lemon is the best combo. The lemon zest really make this blueberry cake taste amazing. It just tastes so fresh and makes you feel like spring is already here.

And buttermilk just makes everything better. It makes the cake so moist and delicious. I think I just might add buttermilk to everything now. Buttermilk in my oatmeal? Maybe.

The batter is obviously the best part about making a cake.

Once I put it in the oven, the whole apartment smelled wonderful.

And after 45 minutes, it was done.

The 15 minutes wait for it to cool down was the longest and hardest part. You can actually smell the lemon and the blueberry. It was wonderful.

I love the top crust because I put some sugar on it before I put it in the oven and it created a nice sugary crust.

The cake was moist, lemony, flavorful, sweet, and rich. I will definitely make this blueberry cake again. And the best part is that I can eat this cake for breakfast because it does have fruit in it. ;)

Buttermilk Blueberry Cake

Serves 6-8

Adapted from Alexandra Cooks

Ingredients:
1/2 cup butter
2 tsp lemon zest or zest of one lemon
3/4 cup sugar + 2 Tbsp
1 egg
1 tsp vanilla
2 cups flour
2 tsp baking powder
1 tsp salt
2 cups blueberries
1/2 cup buttermilk
1 tbsp sugar (for topping-optional)

Directions:

1. Preheat the oven to 350 F.

2. Cream together butter, sugar and lemon zest.

3. Add egg and vanilla and beat until combined.

4. Add flour, salt, baking powder and buttermilk and beat until combined.

5. Fold in the blueberries.

6. Grease a 8-inch pan with non-stick spray. Spread batter into the pan and sprinkle the batter with 1 tbsp of sugar. Bake for 45 minutes. Cool it for 15 minutes.

Best served with a cup of coffee. Now you have an excuse to eat cake in the morning. You’re welcome. ;)

    It seems to me that we’re both on a blueberry/lemon kick right now and I’m loving it! It’s probably one of my favorite combinations..other than peanut butter and chocolate :)

  2. I dont eat lemon that often but this recipe looks great I love using minimal ingredients! I dont think I could have it for breakfast though. Mostlikely I would eat it as a dessert :)

    • It was super moist and fluffy and the best blueberry cake I’ve ever eaten and I’m not exaggerating either! Haha! I’m planning on making it again this weekend because it was THAT good. Oh, and boyfriend loved it. He ate it more than I did because it was so good. :)

  3. I looove blueberry and lemon together! I also love lemon and coconut together. Mmm lemon, blueberry AND coconut. Now that’s a combo made in heaven right there!
